This purple, pisco-based cocktail from Mission + Market in Atlanta also uses mezcal and an ube syrup.

Ingredients
1 ½ oz. Caravedo pisco½ oz. Kimo Sabe mezcal½ oz. Ube syrup½ oz. Lemon2 oz. Egg white
Instructions
Combine ingredients in a mixing tin.
Shake and strain into a coupe glass.
Garnish with lavender seeds and Creole bitters.
Notes
For Ube syrup:
500 g. White sugar
500 g. Water
1 oz. Ube extract
1 tsp. Vanilla extract
500 g. White sugar
500 g. Water

Add everything to a small pot and place over medium heat.
Bring to a soft boil, whisking together continuously until all the sugar has dissolved.
Remove from heat and strain through a chinois.
