Most people have never heard of sotol. Here’s why that’s about to change.

Sotol is a spirit made from the dasylirion plant (not agave) in the northern Mexican desert.

It received its own Denomination of Origin in 2002, separate from tequila and mezcal.

More herbal. More mineral. Less tied to the cooked agave notes people expect.

It’s a category unto itself, and it’s largely been kept within Mexico.

That’s changing. Slowly but surely.
