The one thing nobody tells you about batching cocktails (and why your batch tastes boozy)
If you’ve ever tried to scale up a cocktail recipe for a party and wondered why it tasted sharper and more alcoholic than the original — it’s not the spirits. It’s the missing water.
Here’s what’s actually happening:
When you shake or stir a cocktail, the ice adds roughly 20–25% of the total spirit volume as water through dilution. That water isn’t a mistake — it’s a core ingredient. A straight-from-the-bottle Margarita tastes like jet fuel. The same Margarita after 15 seconds in a shaker is balanced, smooth, and drinkable. The difference is ~0.75 oz of water per drink.
When you batch a cocktail without accounting for this, you’ve left out a key ingredient at scale. Your batch isn’t wrong because you’re a bad bartender. It’s wrong because nobody told you about the water.
The fix is simple — here’s the math:
For shaken cocktails (Margarita, Daiquiri, Cosmo): add 25% of total spirit volume as cold water
For stirred cocktails (Negroni, Manhattan, Martini): add 20%
For built/highball drinks served over ice: add 10–15% and let large-format ice handle the rest
For carbonated drinks: add 0% — replace that volume with sparkling water or soda, added at party time
Example — Batch Margarita (serves 8):
14 oz Tequila Blanco 7 oz Triple Sec 5.25 oz Fresh Lime Juice 3.5 oz Agave Syrup 5.25 oz cold water ← this is the ingredient everyone skips
Mix everything. Refrigerate overnight. Serve over ice with a large ice block in the dispenser (small cubes over-dilute — use a large format block frozen in a Ziploc bag).
The batch tastes better the next day because the ingredients have had time to marry. Party guests think you hired a bartender.
One more thing: small ice in a drink dispenser ruins a carefully calibrated batch. Large cocktail ice melts slowly and keeps your dilution math intact for 3–4 hours of party time. Freeze water in a Ziploc the night before and drop the whole block in.
