What’s something about wine you still don’t understand?

I’ve been drinking wine for a while now and there are still parts of it that make no sense to me. I understand the basics enough to know what I like but then I’ll hear people confidently talk about tannins, minerality, structure tight finishes or how a wine opens up and I don’t know if I’m missing something or if my palate just isn’t there yet. The weird part is that sometimes I think I understand it for a second and then the next glass completely throws me off again. I enjoy wine but there’s still this gap between casually drinking it and understanding the language around it. I’m curious what other people still don’t fully get, even after drinking wine for years.
