Sweet Pea Margarita
This riff on a ’Rita gets its vegetal notes from an herbal liqueur and a sweet pea and pineapple syrup.
Sweet Pea Margarita
Ingredients
2 oz. Gran Coramino cristalino tequila¼ oz. Dolin Genepy herbal liqueur¾ oz. Sweet pea and pineapple syrup*1 oz. Lime juice2 dashes 80/20 Saline solution
Instructions
Chill a rocks glass in the freezer.
Combine all ingredients in a shaker.
Add ice and shake for 6-8 seconds.
Double strain over 1 large ice cube.
Garnish with skewered frozen peas.
Notes
*For Sweet pea and pineapple syrup:
1 cup Frozen peas
½ cup Pineapple juice
½ cup Water
1 cup Sugar
1 cup Frozen peas
½ cup Pineapple juice
½ cup Water
1 cup Sugar
Combine ingredients and blend together for 1 minute. Strain and store in a tight container in the refrigerator for up to a week. (The longer it stays in the refrigerator, the stronger the flavor.)
