Review: Wyoming Whiskey National Parks No. 5 Limited Edition Bourbon (2025)
Wyoming proudly boasts seven national parks, making it the perfect muse for Kirby’s Wyoming Whiskey’s celebrated National Parks Series. This annual limited edition release pays homage to a different national park each year, with a portion of the proceeds dedicated to preserving the featured park’s natural beauty and heritage.
The first four editions spotlighted Wyoming’s own breathtaking parks, but in 2025, the Wyoming Whiskey National Parks No. 5 Limited Edition Straight Bourbon takes a bold step beyond state lines to honor Maine’s Acadia National Park — marking the series’ first tribute to a national treasure outside Wyoming.
In a commitment to conservation, Wyoming Whiskey is donating $10,000 to Friends of Acadia in Bar Harbor, supporting vital efforts to protect Acadia’s pristine landscapes and enhance the visitor experience for generations to come.
The Acadia edition features a non-GMO mashbill of 68% corn, 20% wheat, and 12% malted barley — all grains sourced from just 100 miles away in Byron, Wyoming. The spirit is distilled with pure water from a limestone aquifer located only 50 miles from the distillery, and patiently aged for at least 5 years and 5 months in Wyoming’s unique climate.
Each release in the National Parks Series offers a one-of-a-kind blend, capturing the essence of the park it honors. The previous editions have earned high praise — but will the Acadia release live up to those lofty expectations?
Wyoming Whiskey National Parks No. 5 Limited Edition Bourbon (2025) Review
The nose begins with a bready aroma of churros coated in cinnamon and sugar. This bread-like scent continues as sweet and nutty baklava notes develop. The bready character remains present when white cake batter appears, accompanied by dried orange peel. It’s somewhat unusual to notice three distinct bread-related aromas, all carrying a sweet quality. This sweetness on the nose sets an expectation for a similarly sweet palate.
On the palate, the sweetness continues, starting with flavors similar to Post Honey Bunches of Oats cereal. The cereal notes briefly meet a touch of grenadine before shifting to creamy vanilla yogurt with a medium viscosity. The finish adds a hint of nutmeg but stays mostly sweet, like vanilla yogurt with honey drizzled on top. At the end, roasted hazelnuts linger, providing a slight tannic touch that helps balance the overall sweetness.
For those who enjoy very sweet bourbon, the Acadia edition will likely be popular. However, it leans too sweet for my personal preference when sipped neat. In cocktails, its sweetness could work well, especially in a Boulevardier, where it would add a pleasant contrast.
