MamaJuana

I’m new to making MamaJuana and was a little concerned with the difference in color between these two bottles.

The bottle on the right: This bottle is light colored and clear. You can see right through the liquid. Preparation: I did three cycles of pouring boiling water over the wood and dumping it to clean it since I purchased this from a street vendor from the DR and was not sealed. I used rum from Barbados, Pinot Nior, and store bought honey for this mix. This bottle has been sitting for about 2 months

Bottle on the left: This bottle is dark colored and cloudy. You cannot see through the liquid at all. Preparation: This did not get the boiling water treatment since this came in a sealed bottle from a reputable vendor. I used Brugal Anejo, Pinot Nior, and raw honey from a local beekeeper. This bottle has been sitting for about two weeks.

Neither bottle has a foul smell. Flavor profiles are different primarily due to the star anise in the left bottle.. both are kept in the fridge.

Aside from the difference in color and clarity, the left bottle also seems to be a little thicker. Not by much, but noticeable when pouring.

Does anyone have any experience with making MamaJuana to know if the left bottle went bad?

Any information would be greatly appreciated!
