Mango pineapple baijiu

I’ve tried flavouring some baijiu (Chinese white spirit) by modifying my old man’s sloe gin recipe. I’ve made one bottle with cherries and sugar and that’s been pretty successful. The other bottle I’ve used mango and pinapple, it’s ended up not tasting great, I think it needs something to give is a more sour kick, any suggestions
