Corralitos Negroni 

This Negroni riff from Hotel Paradox in Santa Cruz, CA, uses a watermelon reduction syrup for a fresh fruity twist.

Ingredients

1 ¼ oz. Dry gin1 oz. Lillet Blanc1 oz. Campari¼ oz. Watermelon reduction

Instructions

Combine all ingredients and stir with ice.
Strain into rocks glass over one large ice cube or into coupe glass.
Garnish with watermelon twist.

Notes

For Watermelon reduction:
Blend and strain one medium sweet watermelon. Add ½ cup sugar and a pinch of salt. Bring to simmer and reduce for one hour
