The much-hyped Barbie movie starring Margot Robbie and Ryan Gosling is scheduled to hit theaters on July 21, 2023, and some bars and restaurants are thinking pink. For instance, Magic Hour Rooftop Bar & Lounge at New York’s Moxy Times Square is running a Barbie-inspired activation on its putt-putt golf course called The Pink Bunny Beach. From May 31 through Sept. 3, guests can immerse themselves in a Barbie beach paradise and sip seasonal pink drinks.
But you don’t need to replicate a Malibu Beach scene or Barbie Dream House: A few themed —preferably pink — cocktails will celebrate the film’s release and honor the fashion doll nicely. (Some Ken-themed cocktails wouldn’t hurt either, though we’re not sure what he drinks.)
There is no shortage of rosy-hued drinks: You can always revisit the Pantone Color of the Year Viva Magenta cocktails or the Valentine’s drink offerings from earlier this year. As with Barbie’s wardrobe, the deeper pink, the better. We’ve rounded up six more Barbiecore-centric recipes that are also suitable for summer.

Ginger Berry Lemonade
Course Drinks
Keyword blueberry, kombucha, lemon, tequila
2 oz. Casamigos blanco tequila½ oz. Fresh lemon juice½ oz. Simple syrup6 Blueberries OR ¼ oz. Blueberry syrupTop off with Gingerberry by GT’s Kombucha
Combine all ingredients, except kombucha into a tin shaker.
Muddle blueberries.
Add ice, shake vigorously and fine strain into Collins glass.
Add fresh ice, top off with kombucha.
Garnish with 2-3 edible flowers and fresh blueberries.

Boozy Strawberry Milkshake
Course Drinks
Keyword chocolate strawberry liqueur, heavy cream, strawberry, strawberry ice cream
Makes 23 ½ cups Strawberry ice cream½ cup Fresh or frozen strawberries3 oz. Mozart chocolate strawberry liqueur¼ – ⅓ cup Heavy creamWhipped cream strawberries, and mint, to garnish
Combine ice cream, strawberries, liqueur and ¼ cup cream in a blender.
Blend until smooth and thick. If too thick, add more cream.
Pour into two glasses and garnish as desired.

Plastic Is Fantastic
Course Drinks
Keyword pink gin, pink graperfuit, Raspberry rose water syrup, raspberry seltzer, sparkling rosé
2 ½ oz. Mumm Napa Brut Rosé sparkling wine1 ½ oz. Pink gin1 ½ oz. Pink grapefruit juice1 oz. Raspberry rose water syrup*1 ½ oz. Raspberry Seltzer
Pour raspberry rose water syrup into the bottle of a glass.
Fill glass with large chunks of crushed clear ice.
Separately, combine pink gin and grapefruit juice in a mixing glass with ice.
Stir to chill, then add pre-chilled raspberry seltzer.
Gently pour into your glass so that it layers on top of the syrup.
Top off with sparkling rosé.
Garnish with grapefruit slice, fresh raspberries and some blossoms.
*For Raspberry rose water syrup:
1 cup Fresh Raspberries
½ cup Sugar
½ cup Water
2 oz. Rose water
Combine all ingredients in a small saucepan. Over medium heat stir to dissolve sugar, and then simmer for about 15 minutes. Fine strain, pressing berry pulp gently with spoon to extract juices. Cool, bottle and refrigerate. Will keep for about 2 weeks.

Strawberry Slushie
Course Drinks
Keyword dark rum, Frozen limeade, Sorel liqueur, strawberries
1 ½ oz. Sorel liqueur½ oz. Dark rum1 oz. Simple syrup½ oz. Lime juice8 Frozen strawberriesMint garnish

Prickled Pink

Keyword agave, agua de tuna, Frozen limeade, Prickly pear, tequila
2 parts Milagro Silver tequila1 part Fresh lime juice2 parts Pink agua de tuna*¾ part Agave nectar1 Lime wheel
Pour all ingredients into a Boston shaker with ice.
Shake vigorously and into a rocks glass with fresh ice.
Garnish with a lime wheel.
*To make Agua de tuna: Peel and roughly chop 5 prickly pear fruits (green and/or red), add to a blender and puree until smooth. Pour through a fine mesh strainer to remove the seeds and pulp.

Pitaya Margarita
Course Drinks

2 parts Espolòn Tequila Blanco1 part Grand Marnier Cordon Rouge¾ parts Lime juice3 parts Dragon fruit juice
Salt the rim of a highball glass.
Shake ingredients with ice.
Strain into the salted glass.
Garnish with colorful pitaya or lime.
