Best Alcohol to Gift?

My boyfriend turns 21 in a month, and I want to gift him a nice bottle of alcohol. I’ll give a little background information on him, in case that helps you with giving me advice haha.

I’ve seen him drink dark liquors and clear liquors. I don’t know what he prefers. While he likes to get drunk, he also loves to just drink casually (I can’t relate, I drink to get drunk). He has more class than me with drinking. He likes mixed drinks (but maybe nothing crazy, I don’t want there to be too much prep work). He likes rumchata with fireball a lot. And Michelob ultra.

He also loves ‘fancier’ drinks like champagne and wine. I have no knowledge on those types of drinks, I never even had any of that stuff till I met him.

I was thinking maybe scotch? I don’t think he’s had it, and it seems fancy with people sipping it out of short thick glass cups in movies. I worry scotch might not suit him though. Maybe a nice rum? Or bourbon?

I would feel safer going with wine/champagne though because I know he appreciates a good bottle. I don’t know what favorite other hard liquors he likes since he usually just drinks whatever I bring haha (cheap vodkas).

I don’t know how fucked up he wants to get on his birthday. I was thinking some fancy wine/champagne/the like for celebration, and something else to get a little more drunk on (or save it for later if he doesn’t want to drink much).

I would really appreciate any help! I’m scouring Google for advice too, but Reddit can help personalize it a little better 🙂

Fyi, I’m a poor college student so nothing that costs $100s of dollars. I have other things I want to get him too! I apologize if this was long and rambling.

Edit: He is also part Japanese and loves anything Japanese!! He’s had Soju before and likes it. Just something to consider, but idk if the best idea would be a Japanese drink!
