wondering about infusing

Howdy y’all, one of my best mates birthdays is coming up and I want to infuse him some gin or vodka with some of his favourite flavours and I’ve got some ideas was just wondering if any of them are good or not because I’ve never infused. So any feedback would be greatly appreciated! I’m not even sure if these would work well eith eachother or gin or vodka lmao. Anyway here they are:

Peach vanilla honey infusion, I’m thinking perhaps I will coat the peaches in a simple syrup maybe through in a nectarine as well or a persimmon

Lemon Rosemary’s and nosterchum syrup

Caramel and persimmon or camarlised persimmons drop them in there

Mint and cucumber
