Drink of the Week: Dappled Tonic Water
In the category of classic-to-craft cocktail mixers, few beverages have become as ubiquitous as tonic water. The bubbly bitter beverage could also be awarded “Most Improved,” as the cocktail renaissance elevated the mixer in tandem with its own ascension. Today, producers of craft tonic waters put just as much thought into the botanicals and flavor profiles of their product as any gin distiller. The result is a beverage, like the Dappled Tonic Water, that easily stands on its own.
Dappled Tonic Water is the creation of three women with long backgrounds in restaurants, distilling, and the drinks business. The Portland, Oregon-based company launched in late 2024 with a trio of flavors and has since landed a handful of awards. Highlighting classic but thoughtful flavor profiles, the Dappled tonics include Aromatic with cardamom, vanilla, and lemongrass; Citrus with yuzu, lemon, and lime; and Floral with rose, chamomile, and lavender.
Beyond a simple bittersweet profile, the Dappled Tonic Water brings enough complexity to enjoy right out of the can, or poured over ice with a garnish. The Aromatic is heady with baking spice and a solid bitter backbone, while the citrus is bright and crisp. And the Floral is fresh and botanical without coming across like perfume.
