Pulque

Ran across this link. Pulque is in the top three when we visit Oaxaca. Made friends with a pulque producing family. One of those drinks your body tells you it is good as soon as it hits your tounge. The flavor/texture (viscosity?) changes day to day, and after 3 days or so I’ll pass it to the harder core pulque drinkers. My hat is off to the families who keep maguey set aside for this craft. They also do mezcal of course.
