Advice on best way to securely make a sale with an item needing to be shipped?

Please don’t bash me for this. I need help securing the best way to sell a rare bottle of alcohol to someone I do not know. They are a collector and want to make this sale to them. I do not want to get ripped off clearly, what advice do you have to secure this sale when I ship the item? PayPal a good option or a better way?
